Chicken Caesar Tacos
We actually made something from the meal plan this week.
One thing...But still, I’m counting it.
Maybe taking pictures of dinner is the secret to getting me to actually cook what I planned? Maybe I don’t need better organization. Maybe I just need to turn dinner into content. Whatever. It worked. And luckily, the meal we actually made was one of my favorites: Chicken Caesar Tacos.

These are super fucking easy, ready in about 30 minutes, and somehow taste way better than something this simple has any right to. I found the idea somewhere on Instagram, made them once, d they immediately became one of those meals we keep coming back to.
This Is Exactly the Kind of Dinner We Need Right Now! We are so freaking busy. Between work, school, robotics, homecoming, errands, appointments, and all the random shit that appears during the week, dinner has been losing pretty badly to real life.

I keep making meal plans.
They’re very optimistic... Then the week actually starts.
So the fact that we made even one meal from this week’s plan feels like an accomplishment. And this one was especially easy because D.J. helped get everything going while I took a shower. He cooked the bacon and prepped the chicken for me, which honestly helped a ton. By the time I came downstairs, half the annoying part was already done.
This is one of the many reasons I keep him around.
Then Anthony Pissed Me Off
Because apparently we can’t just have a peaceful dinner story around here. I’ve been trying to figure out how I want to rearrange our living room, and I asked Anthony to draw me a better picture of the room so I could visualize everything. He did not understand why this mattered to me.
At all.
Instead, he got annoyed that I even asked, started making comments, got pissy about it, and then started judging my drawings. Wrong move, kid.
I finally got fed up and went upstairs. I texted D.J. and explained how I was feeling and what I needed from him, and he completely got it. He explained to Anthony that I like to tinker with things. I don’t have a garage or a workshop to mess around in, so rearranging the house and figuring out ways to make our space work better is kind of my thing. And if I feel like the room functions better and there’s more space, I’m probably going to relax more. Which was exactly what I needed someone to understand.
Anthony still didn’t really get it at first. But eventually, he came upstairs, apologized, and gave me a hug. He genuinely just didn’t understand why I wanted to rearrange everything.
Now he gets it. And apparently he is prepared to move the entire living room around. Even better, he cleaned up dinner for me. I call that an apology and a win.
Teenagers, man.
Back to the Tacos...
These could not be easier.

Season some ground chicken. Spread it directly onto a tortilla. Put the chicken side down on a hot griddle. Cook it. Flip it. Then pile on Caesar salad, Parmesan, dressing, and bacon. Done.
If you buy pre-shredded lettuce, you save even more time. Yes, I know shredding lettuce takes like three minutes. Those three minutes matter sometimes. Buy the bag.
Chicken Caesar Tacos
Prep time: About 10 minutes
Cook time: 15–20 minutes
Total time: About 30 minutes
Ingredients
Ground chicken
Flour tortillas
Salt
Black pepper
Garlic powder
Onion powder
Romaine lettuce, shredded
Caesar dressing
Parmesan cheese
Cooked bacon, chopped
Extra black pepper, if you want it
How to Make Them
Heat a griddle or large skillet over medium-high heat.
Season your ground chicken with salt, pepper, garlic powder, and onion powder.
Spread a thin layer of chicken directly onto one side of each tortilla.

Put the tortilla chicken-side-down on the hot griddle.

Cook until the chicken is browned and completely cooked through.

Flip it and cook the tortilla side for another minute or two.
Remove it from the griddle.
Top with shredded lettuce, Caesar dressing, Parmesan, and bacon.

Fold it up and eat.

We ate ours on paper plates. I am not making a super easy 30-minute dinner and then ruining the whole thing by creating a pile of dishes. That defeats the purpose.
Definitely Staying in the Rotation
I love these tacos.
They’re easy, they’re filling, everybody can adjust their own toppings, and they’re realistic for the kind of weeks we’re having right now.
And we actually followed the meal plan for one whole day.
Honestly?
Huge success.
